Desarrollo de jarabes fructosados de caña de azúcar a partir del guarapo

In this research the basic conditions to produce fructose-rich syrups from sugarcane raw juice were studied. The procedure included purification processes for raw sugarcane juice such as adsorption with activated carbon and ultrafiltration using polymeric membranes. The enzymatic hydrolysis of the purified juice was carried out using S. cerevisiae invertase. Concentration was performed using a lab lyophilization unit reaching 75.3% db (dry solids basis). The syrup contained 36.2% sucrose, 30.2% glucose, and 30.2% fructose, 2.1% ash. Syrup color was < 25 RBU and its pH value was 3.9
