Estudio de los factores que influyen en la producción de piloncillo de caña de azúcar

Sugar cane in the region of La Huasteca (Mexico) is used for the production of refined sugar and in lesser grade for the traditional production of non-centrifugal sugar cane. The objective of this work was to detect and analyze the effect of variables that directly influence the process of making non-centrifugal sugar cane, considering temperature, °Brix, pH and color of the final product. It was observed that: during the addition of lime significantly changes the pH obtaining a quadratic effect as a result, adding vegetable fat has antifoam function in the sugars concentration step, and the temperature presented three important stages throughout the process. The results proved that the tests allowed to determine the main factors involved in the process
