Fabricação artesanal de rapadura aerada com amendoim – uma alternativa para os agricultores familiares da zona da mata pernambucana

Family farmers in the ”zona da mata“ area of Pernambuco are subjugated to the interests of mill owners. Much of these families cultivate sugar cane to sell at fixed price by owners. The development of aerated brown sugar with peanuts presents a viable alternative to the commercialization of sugar cane, which added value and breaking this dependency cycle. The formulation presented for aerated brown sugar with peanuts showed excellent results in sensory analysis, high purchase intent (94.22%) and yield of 17.95%, which indicates a commercially viable product.
